Bananaberry DA bomb muffins!
1 cup rolled oats
½ cup almond flour (ground almonds)
½ cup coconut flour(or other type) flour
¼ wheat germ (or oat bran or flax meal)
¼ cup brown sugar (or coconut sugar or maple flakes)
1 ½ tsp. baking power
1 tsp. baking soda
½ tsp. salt
Add some flax meal (unless used above), plus a sprinkle of hemp and chia seeds
1 ½ cups mashed ripe bananas (can use some chopped apple if don’t have enough banana)
2 egg whites
¼ cup melted butter or margarine (or coconut oil)
1 cup fresh or frozen blueberries
Preheat oven to 375ºF.
Combine oats, flours, wheat germ (or oat bran/flax), sugar, baking powder, baking soda, salt, flax, hemp, chia seeds in a large bowl. Stir well and set aside.
In a small bowl, whisk together mashed bananas (and apple if used), egg whites and melted butter until smooth. Add banana mixture to dry ingredients and mix until just moistened. Gently fold in blueberries.
Spray muffin tin with non-stick spray (or use paper muffin cups). Divide batter evenly between 12 muffin cups. Sprinkle top of muffins with hemp seeds or oats if desired.
Bake for 20 minutes or until wooden toothpick inserted in centre comes out clean.
Makes 12 muffins.
